recipes

I made dairy free pumpkin muffins last week but they fell. I used an egg replacer that's the only thing I can think of.
I ordered some supplements from www.iherbs.com for gall bladder. I should get them next week.
So far I have 3 recipes for main dishes I can eat. Chicken and rice casserole, navy bean soup and split pea soup. The list grows! I tried putting a ham shank in my navy bean soup and didn't get sick, woo hoo!
Business is slow, as it usually is this time of year. Time to work on my taxes and discover more recipes.
I am almost completely organic now and all the meat I eat (which is very little) is free range with no nitrates. I wonder sometimes if eating non organic foods were also making me sick.

my new gluten , dairy, egg, free etc.diet

I'm sure everyone is sick of me talking about all the food I have given up so I decided to write about it instead; maybe I can get it out of my system.

A couple of weeks before Thanksgiving I started researching all my body issues. In May of 2004 I had my gall bladder removed and I thought because of that I could eat anything. Well it turns out I am not alone. When I googled diets for gall bladder removable it turns out you are not suppose to eat fat because you don't have a gall bladder to process it, so your liver has to do it. So.. no dairy, no eggs, no processed food and only very lean meat (chicken breasts and red meat with no marbling :( ) no fried foods.
I have acid reflux so nothing with acid citrus fruit, tomatoes, and onions.
I also have diverticulitis so no nuts, seeds or popcorn.
I was taking Elations which is a joint compound because RA runs in my family. Believe it or not my joint pain got worse. I stumbled on a fact that glucosomine comes from lobster which I have been allergic to since my late 30's. All the supplements I've been taking seems to be making me worse instead of healthier. When I looked at the ingredients most of them contained dairy or gluten. The next thing I gave up was gluten.

That does not leave a lot left to eat.

I found a website www.cookingallergyfree.com when I was trying to find a pasta sauce without tomatoes. It's a pretty cool site. You put in all the foods you can't eat and it gives you safe foods you can eat. For instance you do a search for pancakes and it will put a green check mark next to all the ingredients that you can eat and a red x on the ones you can't. This is cool because if there is a red x next to eggs you can replace it with an egg replacer like Ener-g. I'm pretty new to this but I am hopeful that I can figure out what is safe to eat. I feel like my body has been cleansed so when I eat something that doesn't agree with me my body lets me know pretty quick to remove that item from my diet.
My family has been pretty careful and Leah even made me cookies that has no dairy, eggs and actually are yummy. I posted the recipe on the allergy free website under apricot cherry cookies. I have them for breakfast.
I'm not suppose to have wine or coffee but on the weekends I have coffee with a little low fat milk and it doesn't seem to bother me. I refuse to give up my wine and I don't have any ill effects from that so there!
It's really hard to find good recipes. I've tried a tomato less pasta sauce that sucked. I have bought Rubi's bread and it's okay but you have to toast it or it will fall a part. Brown rice bread is horrendous. My first husband's wife, Susi, gave me a recipe for dinner rolls that I'm going to try this weekend. I had them on Thanksgiving and they were really good.
I just took a chicken and rice casserole out of the oven and I'm happy to say it's wonderful. I used rosemary instead of sage and added a flavor pack from Swanson (no msg, gluten or onion, yay!) We'll see if I have any reaction.
I have to say as hard as it is to keep to this diet I am feeling a whole lot better. I haven't thrown up in weeks and my joint pain is a lot better.
I tried french fries yesterday in a restaurant I really like but I had problems with them. I barely made it home. I thought because they used vegetable oil I would be okay but I wasn't. Potatoes are a safe food for me but obviously not french fries. I live on baked potatoes.
I don't expect anyone to follow this blog but it felt good to write it down instead of driving my family crazy with this stuff.
