Servings: approx.
Preparation Time: 15 minutes
3 cups coconut flakes
1 1/2 cups almond flour
1 cup maple syrup
1/3 cup coconut oil, melted
1 tablespoon vanilla extract
1/2 teaspoon salt
Mix all ingredients together well. Form into balls and refrigerate until firm.....I actually freeze them! When we make these they are gone in a few minutes because they are soooo good!
Recipe submitted by Stephanie, Goodyear, AZ
I think next time I will use shredded coconut I think they will hold together better but they really were yummy.

chicken and rice
I just made a quick chicken and rice dish. It turned out pretty good. You could use it as a soup or thicken it with potato starch (thank you Brenda) like I did. I think kids would like it. I cooked Trader Joe's quick brown rice (takes 12 minutes) While the rice was cooking:
In a big pot I added chicken broth as much as you want I think I had over a cup; and 2 Swanson's chicken flavor pack with 2 cups of water. (no gluten no msg no onion) If time permitted you could saute chopped celery ribs in butter (or oil) but I used celery salt tonight. You could also saute onion if you wanted but I can't do onions. I added diced chicken breasts that I had cooked and froze last weekend. I also added 2 bay leaves and some rosemary (rosemary and chicken are perfect together!) I let that simmer for about 20 minutes then added the rice. At this point it would make a nice thick soup but I'm fond of stews so I thickened it with potato starch. I didn't use corn starch because I'm sure about corn yet. Oh and for Leah I added peas and carrots frozen:o) What can I say I'm not a veggie person.

roasted red pepper pasta sauce recipe
I went to my favorite cookingallergyfree site this morning and it was gone. I was redirected to some weird site that had nothing to do with cooking. :o(
I was looking for a tomato free pasta sauce. I really miss pasta. I tried one a while back with yams and beets and it was disgusting. I had seen one with just roasted red peppers and book marked it but now it's gone so I made one up.
2 red peppers roasted and peeled.
garlic (according to taste)
red wine about 1/4 cup
Italian seasoning
celery salt
salt and pepper to taste
puree peppers and wine transfer to saucepan and add spices. Cook about 20 minutes on low for the spices to mingle with sauce. You can add onion but I can't eat them so I left them out.
I poured the sauce over brown rice pasta (gluten free)
It wasn't bad at all.
If you like a cream sauce you can add cream or almond milk if you're dairy free and change the red wine to white.
Enjoy

recipes
I made dairy free pumpkin muffins last week but they fell. I used an egg replacer that's the only thing I can think of.
I ordered some supplements from www.iherbs.com for gall bladder. I should get them next week.
So far I have 3 recipes for main dishes I can eat. Chicken and rice casserole, navy bean soup and split pea soup. The list grows! I tried putting a ham shank in my navy bean soup and didn't get sick, woo hoo!
Business is slow, as it usually is this time of year. Time to work on my taxes and discover more recipes.
I am almost completely organic now and all the meat I eat (which is very little) is free range with no nitrates. I wonder sometimes if eating non organic foods were also making me sick.
Happy New Year! My only resolution is to eat healthy and stay positive.
God bless.

my new gluten , dairy, egg, free etc.diet
I'm sure everyone is sick of me talking about all the food I have given up so I decided to write about it instead; maybe I can get it out of my system.
A couple of weeks before Thanksgiving I started researching all my body issues. In May of 2004 I had my gall bladder removed and I thought because of that I could eat anything. Well it turns out I am not alone. When I googled diets for gall bladder removable it turns out you are not suppose to eat fat because you don't have a gall bladder to process it, so your liver has to do it. So.. no dairy, no eggs, no processed food and only very lean meat (chicken breasts and red meat with no marbling :( ) no fried foods.
I have acid reflux so nothing with acid citrus fruit, tomatoes, and onions.
I also have diverticulitis so no nuts, seeds or popcorn.
I was taking Elations which is a joint compound because RA runs in my family. Believe it or not my joint pain got worse. I stumbled on a fact that glucosomine comes from lobster which I have been allergic to since my late 30's. All the supplements I've been taking seems to be making me worse instead of healthier. When I looked at the ingredients most of them contained dairy or gluten. The next thing I gave up was gluten.
That does not leave a lot left to eat.
I found a website www.cookingallergyfree.com when I was trying to find a pasta sauce without tomatoes. It's a pretty cool site. You put in all the foods you can't eat and it gives you safe foods you can eat. For instance you do a search for pancakes and it will put a green check mark next to all the ingredients that you can eat and a red x on the ones you can't. This is cool because if there is a red x next to eggs you can replace it with an egg replacer like Ener-g. I'm pretty new to this but I am hopeful that I can figure out what is safe to eat. I feel like my body has been cleansed so when I eat something that doesn't agree with me my body lets me know pretty quick to remove that item from my diet.
My family has been pretty careful and Leah even made me cookies that has no dairy, eggs and actually are yummy. I posted the recipe on the allergy free website under apricot cherry cookies. I have them for breakfast.
I'm not suppose to have wine or coffee but on the weekends I have coffee with a little low fat milk and it doesn't seem to bother me. I refuse to give up my wine and I don't have any ill effects from that so there!
It's really hard to find good recipes. I've tried a tomato less pasta sauce that sucked. I have bought Rubi's bread and it's okay but you have to toast it or it will fall a part. Brown rice bread is horrendous. My first husband's wife, Susi, gave me a recipe for dinner rolls that I'm going to try this weekend. I had them on Thanksgiving and they were really good.
I just took a chicken and rice casserole out of the oven and I'm happy to say it's wonderful. I used rosemary instead of sage and added a flavor pack from Swanson (no msg, gluten or onion, yay!) We'll see if I have any reaction.
I have to say as hard as it is to keep to this diet I am feeling a whole lot better. I haven't thrown up in weeks and my joint pain is a lot better.
I tried french fries yesterday in a restaurant I really like but I had problems with them. I barely made it home. I thought because they used vegetable oil I would be okay but I wasn't. Potatoes are a safe food for me but obviously not french fries. I live on baked potatoes.
I don't expect anyone to follow this blog but it felt good to write it down instead of driving my family crazy with this stuff.
Happy holidays
Paula

Pashur's workshop
I was blessed to be able to host his workshop here yesterday. He is an amazing teacher. I learned several new designs that really pop. He taught us a 3D scorpion, spider and a wicked rose!
I made baked ziti for lunch with french bread and salad and of course my toffee. I've had many requests for the recipe so I am going to put it on my blog.
1 pound of butter
2 cups of sugar
small bag of finely ground nuts ( I use walnuts)
12 oz bag of semi sweet chocolate chips
heavy duty sauce pan
melt sugar and butter in saucepan and stir constantly over medium heat. The second it starts to steam take it off the heat and pour it into a cookie sheet with raised edges. Spread it out and sprinkle the chocolate chips over the butter sugar mixture. Spread it out smooth over the mixture and then sprinkle with the ground nuts. Let cool and break into pieces.
Enjoy!

my first day with my new blog
11-28-2008
Well this is interesting. I finally decided to start a blog. A bit about me.
I'm a balloon artist and Face painter. I also have just started a web store selling henna and glitter tattoo kits for $15.00 each. These are really cool stocking stuffers for teenagers and women. I get all my henna supplies from www.amerikanbodyart.com. I use only natural henna(Jamila)
I got into henna because I found myself being limited with balloon art and face painting to certain age groups and when I first heard of henna I realized that older ages were really into henna tattoos and henna designs. At first I bought the premade henna and then I tried to mix my own, what a mess! I bought it premade for a couple of years and then after researching more I tried again to mix it and it definitely got easier.
Now with balloon art, henna, face painting and glitter tattoos I have lots of channels for my creativity. For now my portfolio can be found at www.sunshineannee.balloonhq.com. My store is www.paulamoors.ecrater.com.
On a more personal note I am a 61 year old single (ok divorced) lady. I live in Petaluma, California in the heart of wine country and I love it here. I like the small town feel but it's close to cities like Santa Rosa and San Francisco.
I hope everyone had a lovely Thanksgiving and I wish you all happy holidays to come.
